I asked this question somewhere in another post awhile back. I still have not received a response. I am like you my brother and I have some heated/hated battles, no matter what sport it is.I stopped playing 2K games (Sega) because up until 2 or 3 years ago they only had one player franchises which I though sucked. I would always ask Sega to put this feature in and for what seemed to be 6 to 7 years, they finally did it.

As far as hall of famers being unlocked in MVP's franchise mode, there is an option to turn it off so you can't sign them. Also, about Ellis and Cobb having similar power ratings, Cobb ended his career with 117 HR. Yes I do realize he played in a different era with deeper ballparks, but it's not like he had Ruthian power.
As far as multiplayer franchises, MVP doesn't have them which really sucks. I don't see why EA can't implement the best features from Madden and put them into MVP.Minnesota Vikings
