How can these be set for exhibition games? Also, any way to control lineups and bullpen rotations during exhbitions?

Go to Rosters Manager in the Main Menu, then go to Edit Rosters. In there, go to any team, be on any player, and press A (X for PS2 users). There's an option that says Edit Lineup, and there's also one that says Edit Rotation.
