What sliders would I have to change to stop my runners from constantly running to the next base on a pickoff (if I was trying to steal a base)?

I think what you are doing is just jumping the gun on the pick off. If you don't already have it turned on, be sure to turn on auto pick off returns. It helps a lot. I usually steal by pushing the D-Pad up and then pushing triangle on the pitchers delivery. Yes, I have been picked off like this too. It's seems to me that when I get picked off it's because my ******* runners decides not to return to the base, even with a small lead. I've had them pick off Babe Ruth before and he was taking the minimum lead.
As for sliders, I can't think off the top of my head what I have them set at. I would have to look once I get home and report back. I feel I have it set pretty good, but I always question myself because I can steal all the time. I do have a very fast team though. -
