Can you use Action Replay for the X-BOX in the middle of a franchise season? If so, will it change the players statistics for that season? Im asking cause im really interested in getting it.

No - in fact, there's no sports game that will let you do this.
Rosters provide a starting place - after that, the Franchise becomes a world unto itself. You need to have the rosters you want, then start a new Franchise.
