I don't know on the first one, but you can't check how many pitches your pitcher has thrown during a game

Trying to remember. I had it and traded it in.
To align your infielders/outfielders, you either use the left or right trigger. I think the left is for infield depth/defense and right is for outfield. Also, make sure this option is set to manual in the options menu.
Check the stats menu when you hit pause during a game. It may tell you there. I'm not 100% on that, though.
