Check out the thread under sliders titled " does difficulty mode affect player attributes." In that thread, there are some guys that did some research on the issue.

I play Pro-Am/Park mostly, so offline mode for me is just a grind for badges/attributes.

I play on 100 speed, Rookie Casual, and "Ask Out" after we're up by 10 points.

seems like superstar sim with a little adjustments on sliders is the best?

I tie them to team ovrs. 70s pro, 80s AS, 90s SS, 96+ HOF.

Keeps it interesting enough.
