Start on default All-Star and every slider not list remains on default All-Star. I play with game speed on 50 on 8 minute quarters. These don't aim for "realism." I'm trying to have fun games that are competitive but I can make shots but I'm not making every shot. I like that default All-Star I can't just blow by everybody with every player. Trae Young is going to blow by a poor defender, but Luke Kennard isn't going to blow by a good defender, etc. You will notice the shooting percentages are unrealistically high. I justify this by the scores making up for 8 minute quarters and because like I said, realism isn't really what I'm aiming for here. The computer still misses the occasional open 3 and contested shot under the basket, even if it feels like sometimes they green everything.
The one thing I haven't been able to fix at all is step back jumpers. Unless you've got Jayson Tatum in the mid range, you're probably not going to be able to make hardly any stepbacks. From what I understand, the only way to fix that on All-Star is to up the USER CPU Shot Timing, THEN you have to start worrying about defensive sliders and contesting and etc. etc. I think unless you really know what you're doing with these sliders that the game plays smoother the closer it is to default. Although it's a shame that setbacks are nearly impossible.

I won't pretend to be a slightest expert in the slightest, but I believe having CPU shot timing on 50 for USER and 60 for CPU levels the green window playing field where both you and the computer are going to green a lot of shots (but sometimes they are defended well and miss and sometimes open shots aren't greened and miss.) I don't know what extent the success ratings affect the non greens, but I don't notice a big difference so I have mid-range and 3pt on 75 for USER. Wanted to give the CPU a slight boost there so they have +5 on all shooting over USER. Free throws are way too easy, but the window at 10 seems about right. Maybe slightly too hard or slightly too easy, but that probably means it's spot on (for me at least.)
Hustle is the only attribute I changed. I have looked at other people's sliders while I've been trying a bunch of things adjusting my own. And high hustle stats is one thing I typically noticed. Now at 90-100 I feel like it's almost too frantic. 75 seems like a happy medium to me. CPU seems to play with more urgency, they're trying to score, they're "hustling".
Let me know and I can upload these sliders as well so you don't have to input them if anyone wants them. I would recommend inputting them though because there isn't a ton of changes anyway.
