So what does setting an MVP do to a card? Am I able to auction an MVP card or take MVP off a card?

No. Mvp is a type of legend card. It is special and can not be auctioned. The mvp title can not be taken off and placed on a card. The Mvp cards are usually slighter better than regular cards

Or, there is your team MVP too. Other people will see the picture of your MVP in quick game, rival clash leader board, etc. You cannot auction or pro this card until you make another player your MVP. However, as xcypressx pointed out, there are also MVP Legend cards. These can only be obtained from packs or 1st or 2nd in Legendary seasons, and thus, are not auctionable.
