You can only call basic plays (iso, post-up, screen) for specific players. Double tap on the d-pad, icons will appear above your teammates heads, then press the corresponding icon to call that play for him.

The numbers in the play tell you who the play is for. For example 15 Fist would be a pick and roll for the pg and center. You can initiate the play with anyone once you know this. If you give the ball to your sg and call this play it now becomes a pick and roll between the sg and center. You want your pg to come off a screen in a set play you initiate the offense with the player who it's originally intended for if that makes any sense.
