Its called Pivoting. This is the way to do it

-- Catch a pass BUT do not dribble.
-- Press Up and the direction like Up left or Up right and it will do a pivot towards that way.
-- Imediatly after you do the pivot hold left or right on the left and right analog stick and your gone :P
