When your house meter is full, hold down two juice buttons and do an alley-oop, then keep holding down the two juices and press the alley-oop button again to make sure you execute the dunk. I do it this way and it works every time. You'll see the screen go blurry when you know youve done it.

any two, L+R is easiest. basically throw up the oop, and when your guy starts to go in the air hold L+R.
