Ive yet to lose since picking up my belt, but it seems like to was an accomplishment rather then a belt I defend.

You start defending your title after you win all the sponsored fights.

Do you get another chance at a sponsored fight later on in your career if you lose that fight the first time? I lost the Dodge fight and I just lost the Everlast one. I didn't get those achievemens and now I don't know if I ever will.

Yes, the sponsored fights eventually come back around again. In fact, the ESPN Wednesday, Friday and PPV events come up often even after you've captured those acheivements.
