Birthdays
Yes, you should be able to create a fighter, and give them a birthday. A minimum age of turning pro, and the year they start their career. For example, if I'm 27 now and I decide I want to start my career in 2000, there would be certain active fighters from that time frame I would fight against, or even check out the stats from the various weight divisions. If I decide to start a career with Ali, it should start in 1960, so fighters such as Foreman and Frazier enter in their respective times.
No need to build physical attributes
This was already mentioned. Tyson didn't start off with a punch rating of 60 when he first started...he was already strong! The main things that should be worked on in training is punch accuracy, stamina, and head movement...technical attributes. You don't get quicker and stronger as you get older as the physical gifts are already there.
With that said, your amatuer and early career should pit you against low rated fighters on amateur difficulty. As you move up the ranks, your competition should get stiffer as u face fighters with high ratings on GOAT difficulty.
I mentioned in the first portion about fighters entering their career at appropriate times. Because their attributes are already high, they should have no problem rising up the ranks.
Scouting
Very simple, we should be able to know what type of fighter we are fighting before we get in the ring.
