Why do features get removed from past games of Madden? Can current gen not handle?

You're right if the EA team were actually really good developers we'd have a good game, unfortunately they're probably one of the worst in the business, horrible talent.

Madden has a huge budget, probably bigger than most of those games.

Certainty not the worst . There is fun to be had, regardless of the bugs

How much better could this game be if there were no time constraints!!! Imagine the perfection

Nol imagine how good this game would have been if they would not have taken all the stuff out and started this gen full featured. Every sports game has time constraints.

So they can be added later and touted as a new feature.

As cynical as this seems, based on what that one disgruntled employee had to say about the Brass just seeing a feature list, it wouldn't surprise me if this is done. Of course, the guilt is taken care of by the team usually improving these features, but I do wonder.
