I have been sacked too many times... Why does the QB hold onto the ball sometimes in the pockets when trying to release the ball to a receiver he just constantly pumpfakes and gets sacked???

I'm pretty sure its because tapping a button two times will pump fake to that reciever.

I find (seriously) that if I'm hesitating on which reciever to throw to, I'll tap lightly and hesitantly and sometimes pumpfake when I don't mean to.

Make your read, and put the ball in there. That might help the isue.
