I just got the game and I cant seem to fine it.

That's one of the things that I don't like about the game. In Madden, the depth chart allows you to choose your 3rd down RB, KR, PR, etc. To answer your question, you have to edit the team's playbook, change the PR and KR, and load the playbook before the game - in order to reflect the changes you have made. In essence, if you wanted to edit every team's KR and PR you would have to edit all 32 playbook.
