I could be wrong, but I think once you play a celeb and beat them, they stop calling you.
Jamie Kennedy was hounding me, too. I played him twice (lost both) and turned him down several more times. But he kept on bugging me, so I accepted his challenge and finally beat him. He hasn't called me since.
Oh and I hope this isn't too much of a spoiler, but once you beat a celeb, they're placed on your "speed dial" and you can play them whenever you want. -
