Okay, so I can create a playbook, but is there ANY way to practice with my custom playbook OR assign it as my favorite playbook in VIP? I'm having a tough time with this one.

Yep. Just hit the "Y" button when you're in setting up a game or practice and you can assign playbooks to both teams, change stadiums and weather conditions, etc. -
