Here are my recommended control settings...
Use the L and R trigger for brake and gas.
Control Settings-
If are new to NASCAR Sim Racing games - Use CASUAL, you'll be slow but you should be able to hold a line. (Careful because you will get tight in the middle of the turns so you will have to lift of the gas "gradually".)
If you are confident enough and you don't need AVS - Use MEDIUM, you'll be a bit faster because you will have better control of the car. Remember though, control of the car isn't the same as car stability. Car stability is up to you and how you well your finger reflexes are tuned.
If you are a veteran at NASCAR Sims (Thunder and other prior console games don't count. If you've run SIMRacing and/or NR2003 without aids you'll be fine.) - Use HARDCORE (manual transmission), you'll be fastest with this way because you will have complete control of the car. No anti-locking and stability control, etc.

Here are my online room recommended settings...
8 Players max
0 AI drivers
Everything else ANY
Private Room - (Assuming you are running with guys that can run good lines.) Go with 10/20% races with wear set to 4x's, Collisions ON, full damage and yellow/black flags. You will have to use pit strategy.
Public Room, with risk - (You may run into the guy that decides he should turn right vs. left just to wreck folks.) If you decide to do this, go with 5% races with wear set to 4x's, collisions ON, Visual damage and black flags only. You will have to pit only once.
Public Room, with no risk - (Quite frankly this how I grew to love this game. I found some good drivers in these rooms and added them to my friends list to race with in Private Rooms.) Go with 5% races, collisions OFF, wear set to 2x's, Full Damage, and no flags. You will not have to pit.
One last thing... If you want to improve you need to practice in tracks other than Daytona and Tally.
