Hmm ... damn good question.

I think the snow and rain look good in Colin McRae Rally 3.0, but my vote goes to either Moto GP or Moto GP 2.

The rain and storm clouds look absolutely fantastic in that game. The rain and storms also look good in Rally Fusion. No coincidence there: Climax Motorsports developed Moto GP, Moto GP 2 and Rally Fusion.
