Well, I got "slalom + 180", "hold a corner", and "perimeter". The suggestions you guys made helped a lot. Now I'm working on "obstacles" and "perfect lap." Man, for the time I've spent trying and retrying, I think there should be more than 1 experience point awarded for the 3 star challenges. I;ve asked myself several times, "I'm doing this for only one point?"

Heh, wait until you do some of the 3-star challenges on the Grand Prix circuits. "Campsa Corner" at Catalunya and "Lukey Heights" at Phillip Island in particular gave me more trouble than any of the 3-star training challenges at Sheridan.
Anyway, for the "Obstacles" training challenge, I found it easier to accomplish by staying on the inside (right) of all 3 obstacles despite what the video example shows. Low gear ratio and maximum (or near max) Acceleration and Cornering is vital toward having a chance to beating this challenge. You'll also have to apply minimal braking (just after passing the first obstacle) so to not bump into the second obstacle, but don't apply too much or you'll not cross the goal in time. You cannot afford to bump any obstacles at all to complete this challenge, because the amount of time you're given to complete it is barely enough to do the job. If you lay a scratch on one of the obstacles -- even slightly graze one of 'em with the rear tire of your bike -- then you might as well pause the game and start over. Plus you cannot go over any part of the grass on the inside of the track while passing the second obstacle. You have been warned. Good luck.

Best of luck, man. But the idea that you need a custom bike to compete online is an absolute myth.
I use a stock bike -- Loris Capirossi -- and finish in the top three of nearly every race in which I compete on XBL. A few times I have been in some races with some unreal stars and been dusted.
But with good riders and below, it is possible to compete and win with stock bikes. Good riding technique still is more important than machinery in this game, one of its many endearing qualities.

I'm really anxious to race online. Can anyone give me more impressions of this aspect of the game? I assume there are some monster racers out there who simply dominate.
The fun part about racing with a custom bike is you get to show off your logo design. Mine is the San Diego Padres, of course. However, I bet things are moving so fast that you really don't take the time to view the other racers' paint jobs.
