Project Gotham Racing 2 is an incredable title and while there is no customizing the looks of your car it is far and away a better feeling and looking racer than NFSU. And it has a 'Stang. This game is also the best online Xbox racer to date.
Burnout 2 is another great game. This game does the cut away crash camera 100x better than NFSU and has similar handling as you race through cities bursting with traffic (better traffic patterns than NFSU as well). But, no customization and no real cars.
Midnight Club 2 does street racing but the handling is off (feels like GTA3) and the graphics a bit murky (looks like GTA3) looking for my taste. The traffic AI is also has a tendancy toward odd. It has no real cars or customization but two things it does have are free roam cities and motorcycles (like GTA3). This game is also online.
Midtown Madness 3 is a great game but plays more like a not so crazy Crazy Taxi than a true racer. Tons of real life cars though - again, no customization. Like Midnight Club 2 it has free roam of the city so you pick your own route to get where your going. Much cleaner looking than Midnight Club but just as jaggy. This game is also online.
Sega GT Online is much slower feeling than NFSU and the graphics won't wow you over although they are not bad by Xbox standards. The physics go for more realism so this probably takes it out of the running for 'arcade racer similar to NFSU'. However, I mentioned this game because it is full of real life cars (including the Mustang) and has a large amount of tuning option (not visual stuff though) which really impact the feel of your car. This game is also online.
Rallisport Challenge is a very arcadey rally title. The handling is a blast and the game looks fantastic although no mustangs and no customization. Also you won't be driving in any cities or at night but if you try this one you might get hooked.
