Well, of course my list would be different from others here (and perhaps more bizarre... not sure), but I would suggest movies things like:

The best I've found on my system, is 'The Lord of the Rings: Return of the King'. Skip to the chapter "The Battle of Pelennor Fields" and when the Oliphaunts arrive, you hear the slow bass building, then the attack, and you just get some astounding surround effects (arrows wizzing around, bass thuds from the creatures, awesome weapon effects).
'Master and Commander' is another AWESOME surround experience.
I would suggest balancing the speakers first. Most systems allow you to adjust speaker distance from the viewing location, an important adjustment (so the sound reaches you at the same time) and also adjust the levels. You can either use a sound pressure meter from Radio Shack (~$50) or adjust by ear so the volume level sounds the same from each speaker...of course your system needs to generate a test tone or your need a pink noise signal from a test disc like AVIA or 'Digital Video Essentials'.

Dude...I forgot about BHawk Down...that movie was great in surround sound. Just off the top of my head, Mel Gibson had a Vietnam movie about 3 years ago that sounded real good!Comment

Star Wars AOTC-Bad film but great sound, alot better than the mix for ROTS
War of the Worlds-Also bad film but the booming bass will scare the **** out of your pets.
Das Boot-Superbit-best mix I have ever heard for a 25 yeard old film.
Fifth Element-Superbit
Starship Troopers-Superbit
Hollow Man-elevator shaft part near the end is extremely immersive.
Phonebooth
Xmen 3-maybe the best I've ever heard.
Men in Black
Texas Chainsaw Massacre remake-chainsaws whizzing everywhere
Hannibal
Fight Club-airplane crash will cause you to jump 3 feet off the couch
Being John Malkovich- When they first get into Malkovich's head it's the most bizarre sound effect you'll hear.
Kill Bill 2-the burial scene is extremely realistic.
Heat-nothing special until you get to the airport at the end.
Collateral-again nothing special until the halfway point and then all hell breaks loose.Comment
