Kinda a broad request. I mean, what are you interested in? Are you talking about easy to find/watch "behind the music" stuff on vh1, or more like "Give me Shelter" about the Rolling Stones and the nightmare at Altamont?

What I really want is a good documentary that gives a lot of insight/details into early rock n roll - like show its transition from country into rockabilly and so forth.

The only thing I have come up with is Chuck Berry's Hail! Hail! Rock n Roll, but that only focuses on Berry.

But I'm up for anything that is interesting.

I think the only one I've ever seen is "Meeting People Is Easy" which was about Radiohead following the release of OK Computer. Not the most exciting doc, but at least interesting enough to watch all the way through once, and they have a few performance videos that are pretty good.

Edit: Reading your post, there was a TV mini-series about The Beatles that came out when the Anthalogy CD sets came out in the 90s(and there is a very good book by the same name). I've seen most, but not all, of that series, it is very well done. Not a broad rock history doc, but a very well done look at The Beatles.

Try this one for size. It's a bit shallow and is more of an overview it's still good. It's from a few years ago and is called

The History of Rock & Roll

Here's another film tho it's not very deep either since it was released in theatres but I enjoyed the singing in the movie and you do get some info about these guys who deserve respect

Standing in the Shadows of Motown

Of course the seminal jazz documentary

Well, docs that focus on early blues & country should help you on your main objective. From the blues side, look for stuff on Robert Johnson. From jazz, look for Charlie Christian.

Here are some other interesting docs:

Sun Ra - A Joyful Noise
            The Decline of Western Civilization
            True Norwegian Black Metal
            D E S E R V E_V I C T O R Y
            R.I.P. Sean Taylor (1983-2007), a True Cane

Not really what you're looking for, but two of my favorites that have not been mentioned
