Can someone tell me why roselyn sanchez was written off rush hour 3? Is jackie chan ghey or something? she was suppose to play his love interest.

That happens a lot. Like I said it's very probable that the shooting schedule conflicted with her other commitments.
She's trying to establish a film career and if she got a job before being offered a role in Rush Hour 3 I'd wager she'd hold on to it rather than walk away. Though Rush Hour 3 has big budget money behind it and would have put her on a better map than the one she's on now, being a committed actor goes a longer way.
Of course, that's all speculation.
