Had the tv a year or so, watching football in HD, and noticed that it keeps changing my color settings when set on Dynamic. I reset them where I want them and a little bit later, it resets again. Can anyone tell me how to stop this?

For 1 I would take it off dynamic. That is the settings for the showroom and basically makes everything a lot brighter, which makes it hotter, and wear it down quicker.
Need more info, but if you can sources, the settings will change, and if you change to a different mode, they also change. -

I had changed them, they would take for a while and then just change while I was watching a program. I could see the screen darken a bit, so I went into settings and saw that they changed themselves.

Your TV is in Store Mode. You need to take-it out of store mode. There is a combination(sequence of button presses) you must use between the TV & the remote.
Edit: Try this
a.) Power your TV ON
b.) Press the channel button and go to any channel
c.) Press the Volume (+) or (-) key
d.) While holding the volume key, press & hold Menu for 10 seconds.
c.) Let go of the Volume key
