Not familiar with The Enternals, do you have a comic story line to recommend ?

I’d go with the Jack Kirby one as he is the one who created them (it’s 19 issues, I believe, but you can get it in two volumes now), although I enjoy the Neil Gaiman one solely because he’s one of my favorite authors.

Aside from the multiverse thing potential, the Celestials creating the Eternals seems like the easiest way to create the first Mutants in the MCU.

They could also do a "Reverse Scarlet Witch" in either WandaVision or Multiverse of Madness.

Yeah I’ve already accepted that the origin is gonna be butchered. Just no way they can stick to it in this universe without doing something crazy with the multiverse and to be honest I’m not liking that either.

Also, Kit Harrington will be making his MCU debut in the film as the Black Knight.

Other announcements include Disney+ live action shows for Ms. Marvel, Moon Knight, and She Hulk.

That was already the case, they've even retconned their origin in the comics, they aren't mutants but instead products of tinkering by the High Evolutionary.

Well, they can only be so original with famous characters I'm sure, then have to reinvent the wheel... seems a lot like all of these remakes we're getting with their derivations.
