For the PS2:The Ace Combat series is good. For the original XBOX- Secret Weapons over Normandy, Crimson Skies, and the Ubisoft titles. For the 360-Blazing Angels is hands down one of the best flight games I've ever played. I still play it two or three times a week. OverG Fighters is due out in about 3 weeks for the 360, and Battlestations Midway is due out in late summer/early fall and will feature not only planes, but ships and subs as well.

I thought Heroes of the Pacific for ps2 was an enjoyable game but thats only if you like world war 2 dogfighting games.

Blazing Angels has a demo available on Xbox Live as well. You could test that out before you buy it.
