So... I just got madden 07 and a whole bunch of my friends always play on it. The thing is, I don't know whether to get the start up kit or the timecards. I've had xbox live before, when it 1st came out a few years ago, but I never renewed it. I don't want to buy a timecard and find out that it doesn't work with the oldest version of xbox live. I called fry's but the guy didn't know what to do either.

I'm guessing by timecards you mean a subscription card? It will work for both the Xbox and the 360. And the start up kit comes with a headset and a year subscription. I think the also have 3 month starter kits if you don't want to subscribe for a full year.
What system do you have right now because the 360 has 3 1 month free trials with it. -

Yep you can set it up on your Xbox and if you ever get a 360 you can account recovery it onto the 360.
You can either get this which comes with a headset, 1 year subscription, and a free game. Starter Kit
