MGS4 - not only do i really want to play it but Kojima is just a master at making a trailer that gets you excited to play the game.

Mass Effect and MGS4. Loved both trailers and I'm a sucker for any game that tells a good story, which is a sure thing with these two games.

That and Mass Effect are the ones I want the most..and of course COD4.

COD4. I haven't seen the BIA trailer yet, but I'm stoked if it's looking good, as that is by far the best WWII franchise around in terms of the tactical prowess of the AI. (I would like something besides France '44, though.)

I was quite intrigued by the UFC trailer, even though someone here already reported it's not in game footage.

I really liked a lot of trailers, but I guess the one that got me the most pumped was Mass Effect. One trailer that hasn't been mentioned that I really liked was the Too Human trailer. I downloaded it off the Marketplace, and while it doesn't show any gameplay, the cutscenes are realtime in the game and I just thought it was quite nice.
