You can set it to where only you have access to your car. If it's not set that way and you play in a public room, it's pretty much a guarantee that some troll will steal it.

This is another reason why I will NOT play in public rooms,if I'm not running with the OSOS gang,my butt stays in the invite only section.

Or put explosives on it, so if they try to steal it, it blows up on them

Yup! And even if they steal it in front of you and get away, changing the settings on the fly will stop your car automatically and kick them out of it.

On now, had a guy doing the worst Peter Griffin impersonation I've ever heard in my life. He and three of his friends came looking for me over the $1000 bounty I had but someone else took before he got to where I was, so I went into passive and flipped his car with my Sandking...I win.

Join GTA Online from story mode and select invite only session.
