Re: Pasta sauce recipes
Rachael Ray has a really good one I made a while ago:
1 tablespoon extra-virgin olive oil, once around the pan in a slow stream
1 tablespoon butter
2 cloves garlic, minced
2 shallots, minced
1 cup vodka
1 cup chicken stock
1 can crushed tomatoes (32 ounces)
Coarse salt and pepper
16 ounces pasta, such as penne rigate
1/2 cup heavy cream
20 leaves fresh basil, shredded or torn
Crusty bread, for passing
Heat a large skillet over moderate heat. Add oil, butter, garlic, and shallots. Gently saute shallots for 3 to 5 minutes to develop their sweetness. Add vodka to the pan, 3 turns around the pan in a steady stream will equal about 1 cup. Reduce vodka by half, this will take 2 or 3 minutes. Add chicken stock, tomatoes. Bring sauce to a bubble and reduce heat to simmer. Season with salt and pepper.
While sauce simmers, cook pasta in salted boiling water until cooked to al dente (with a bite to it). While pasta cooks, prepare your salad or other side dishes.
Stir cream into sauce. When sauce returns to a bubble, remove it from heat. Drain pasta. Toss hot pasta with sauce and basil leaves. Pass pasta with crusty bread.Comment

Re: Pasta sauce recipes
Frowned upon?
I like being experimental with things. I don't know but it seems pretty natural to me to know what will taste good and what won't.
But I don't cook often so I have nothing to share."It may well be that we spectators, who are not divinely gifted as athletes, are the only ones able to truly see, articulate and animate the experience of the gift we are denied. And that those who receive and act out the gift of athletic genius must, perforce, be blind and dumb about it -- and not because blindness and dumbness are the price of the gift, but because they are its essence." - David Foster Wallace

Re: Pasta sauce recipes
Making sauce involves little more than opening cans of tomato sauce and paste, chopping veggies and adding spice. It's not hard.
Take care,

Re: Pasta sauce recipes

Re: Pasta sauce recipes
I use recipes from others all the time. I make substitutions for different things or leave something out if I know I don't like it, but if you don't know what goes into something, how are you going to cook it. I can cook very well and most people are shocked when they taste my food, but I always cook from other people's recipes I get off the internet. I'm not a professional chef, so I don't care where I get the recipe from, I just care that it taste good.Comment

Re: Pasta sauce recipes
You don't cook much do you?
Same here, which is why I was asking the question. There are things out there that I've seen that I would never think to try. Getting a recipe helps my creative side, and allows you to see what goes together.Comment

Re: Pasta sauce recipes
Eat Ragu!
Seriously, combine tomato paste and tomato sauce in a crockpot or pan until you get the consistency you like. A touch of olive oil -- don't use vegetable oil! -- also helps with the consistency and adds taste. Chop up some fresh garlic and add it to taste. Do the same with a white onion. Then add some oregano to taste. Now for the secret ingredient: Add just a touch of brown sugar to take the bitter bite out of the sauce.
You can add meat if you'd like, or really jazz up that base sauce with crushed red pepper or cayenne pepper.
Take care,

Re: Pasta sauce recipes
I have a personal recipe that i always use. I will not eat pre flavored tomato sauce.
2 cans of HUNTS tomato sauce. (unseasoned)
2 tbls of extra virgin olive oil
cover the top with garlic powdwer, or fry up some fresh garlic before you dump the sauce in.
sprinkle some oregano, basil, and black pepper, or crushed red pepper if you like it spicy.
never ever add sugar
I have been told its some great gravy!Comment
