I never thought I would eat Brussel Sprouts..until now.

If you want a damn good side dish for chicken, beef, whatever.

Take Brussel Sprouts, cut them in half, remove any yellowing, hanging leaves off each sprout and cut off the ends.

Then throw the sprouts in a zip lock bag with a little bit of olive oil and shake it until each sprout is covered.

I also cut up some Parsnips and threw them in there.

Then spread out the Sprouts (and Parsnips) on a baking sheet, with the cut side of the Sprout facing up. Add a little salt and pepper to taste (I also added some dried cumin for a more savory flavor).

Heat your oven to 400 F and put the Sprouts and Parsnips in for 30-40 minutes or until golden brown.

Serve.

The smell is incredible and they taste even better. I baked some marinated Chicken Breasts with this tonight and OMG!!! Great meal!

If you've never had Brussels or have and haven't tried them roasted....I highly suggest this meal!

Brussel Sprouts are GOOOOOD! This makes me think of something my wife and I were talking about yesterday. We are both from the South (LA for her, SC for me), but she has not tried fried liver, gizzards, fatback, or ham hocks. She had never had venison, pork ribs, gator meat, or fried turkey before either. I cannot even get her to try these things, and I tell her all the time she must have been adopted from Canada or something. J/K my Canadian ham hock eating friends, but I will try almost anything food wise at least once.

I take a small cast iron pan, and cover the bottom with 50 / 50 olive oil and butter. on medium low..

Throw in a few raw onion strips...

When the onion's start to brown, arrange halved sprouts that have had the bottoms cut off and any tacky looking leaves removed...

Cover...10-15 minuts later you're ready to go...
