Anyone have any good recipes for the Crock Pot/Slow Cooker?

I got one for Christmas, and I'm starting to use it.

I have some basic Ham BBQ going right now, but I'm interested in making some other good/easy stuff.

Anyone have anything that's good in the Crock Pot?

Pork shoulder with a dry rub (usually garlic, thyme, cayenne pepper, paprika), do a very quick sear in a hot skillet, and then put it in the slow cooker for 8-10 hours on low with your favorite barbecue sauce or make one from scratch.

The pork comes out fork tender, you can shred it, and have a nice pulled pork sandwich.

You can also do it with a piece of brisket, but I prefer beef with a pepper encrusted rub as opposed to the more flavorful spices above.

Chili also works great in a slow cooker. You can get the cube shaped beef "stew" meat and after simmering all day it's amazing how tender those chunks become.

Lastly, apple cider, three each of lemon and lime halves, some cloves, and a few cinnamon sticks (nutmeg if you're adventurous) makes a damn tasty spiced cider drink for cold nights...plus, it goes well good bourbon as a cocktail.

Thanks! There was a recipe thread here months ago and I posted some stuff there as well.

I just love cooking, be it slow cooker or what have you. Heck, I grill in the middle of winter (had a couple strip steaks last night and have another hunk of beef in marinade for tomorrow).

If you come up with any more new recipes of any kind please post. I'm interested to see what else you have.

We only do a few things in the Crock Pot. Should probably do more.

A very simple Pot Roast recipe is to just get a really cheap Pot Roast and throw in a can of coke with 1 cup of ketchup. Let it sit for 10-12 hours and it's great.

We do a Sweet and Sour Chicken recipe in the slow cooker (really easy and we do rice on the side) but I'll have to get the recipe from home.

We also do a couple Beef Stews that are great (again, don't have the recipe at work).

Soups and stews are really easy. I just made this last night, though I just did it in a regular pot.

              Vegetable Soup w/Quinoa

2 cans tomatoes (I used Italian-style with herbs, doesn't matter though)
              1 can corn
              1 can green beans
1 can white beans (Navy beans will work, but Northern White or "White Beans" are the best because they're a little bigger and hold up to cooking)
              1 zucchini
1 cup celery root (or regular celery)
              1 cup diced onion
1 cup diced baby carrots (cut them on a bias if you want big thin pieces)
              1 1/2 cups of quinoa
              2 cloves garlic
1 box (16 oz?) vegetable or chicken broth
              2 bay leaves
              1/2 tsp onion powder
              1/2 tsp garlic powder
              dash of oregano and basil

Sautee the onions, garlic, celery root, and carrots for 2-3 minutes in some olive oil (with a crock pot, you could just throw them in there, but I relly like the onions sauteed because it imparts more flavor)
Add the tomatoes, broth, quinoa, and spices -- let it come to a boil and then reduce the heat
Add the rest of the veggies, let cook for 30 mins or so (basically just to make the zucchini tender)
Remove the bay leaves, and serve with some crusty bread

Obviously with a crock pot, you can basically just throw everything in and put it on low all day -- should be tasty either way. Quinoa holds up very well to extended cooking, so it shouldn't get soggy like rice often does.

You could add chicken to this for sure... you could also change it to beef broth, add a roast or cubed steak, and make it a big one-pot kind of meal.

Perfect timing for this thread, I was doing stuff with my mom on Saturday and we saw a great deal on a slow cooker so I got one...

I'm planning on using it for meatloaf and also to cook chicken breasts so I can shred them for tacos/burritos/etc. I may have to try a stew sometime, that could give me food for a week or so...otherwise things are just too much effort for just me.

Re: Anyone have any good recipes for the Crock Pot/Slow Cooker?

Get it from the bulk section of Whole Foods/Sunflower Market/Trader Joe's type of stores... it's cheaper there. But you can also find it in King Soopers in boxes near the rice or sometimes in the "organic" section.

A little more about quinoa: http://www.whfoods.com/genpage.php?t...spice&dbid=142

                    Highlights:

Not only is quinoa high in protein, but the protein it supplies is complete protein, meaning that it includes all nine essential amino acids. Not only is quinoa's amino acid profile well balanced, making it a good choice for vegans concerned about adequate protein intake, but quinoa is especially well-endowed with the amino acid lysine, which is essential for tissue growth and repair. In addition to protein, quinoa features a host of other health-building nutrients. Because quinoa is a very good source of manganese as well as a good source of magnesium, iron, copper and phosphorus, this "grain" may be especially valuable for persons with migraine headaches, diabetes and atherosclerosis.

                    Cardiovascular Health

Quinoa is a very good source of magnesium, the mineral that relaxes blood vessels. Since low dietary levels of magnesium are associated with increased rates of hypertension, ischemic heart disease and heart arrhythmias, this ancient grain can offer yet another way to provide cardiovascular health for those concerned about atherosclerosis.

Oh, and if you get it unboxed, make sure to wash it off in cold water. You can soak it, but it's best to just hit it with a stream of water while sloshing it around in a mesh strainer for a while.

Pork chops and a can of Cream of Mushroom soup. Set on low when you leave for work and when you come home...BAM!

Similar thing with a pot roast. Cream of mushroom. Add some potatoes and carrots later so they're not mushy. It's absolutely delicious. A favorite of mine.
