      Buy a whole skin-on chicken (giblets and whatnot removed, you don't need them).

      Put fresh basil, oregano, parsley, and any other herbs you like (I'd go with marjoram, chervil, rosemary if you want that twang, etc.) in a food processor along with salt/pepper, lightly-sauted (or roasted whole) garlic, and some olive oil and pulse it until it's a nice paste. If you don't have a food processor, just chop the holy hell out of it and smash it together with a spoon in a bowl.. you just want it to be combined really well.

      Cut or force your way underneath the chicken's skin (start from the top of the breast near the neck hole), clearing out a cavity underneath the skin with your hand... stuff the herb mixture underneath the skin and massage it into the meat and put a little bit on the outside of the skin as well (mostly for the oil). You can also stuff the inside cavity with citrus and/or more herbs for additional flavor and aroma.

      Tie the chicken with some twine (lay the wings directly underneath the body against the breast so they don't get hard, tie the legs together just to keep everything in a nice football-shaped package so it cooks evenly) and roast in a 400 degree oven for about 45 minutes or until the outside is golden and the juices run clear.

      Let it rest for 10 minutes (breast side down so the juices redistribute) or so before carving... it'll be basically the best chicken you've ever had because the skin gets crispy, the bird is well-seasoned and moist, and the herbs impart a ton of flavor. Serve it with rice and Italian vegetables, slice it and put it over pasta with a creamy sauce (or an olive-oil based sauce with vegetables)... or like me, just devour it like a damn caveman.

      Use the leftovers for chicken salad (that Italian recipe I posted is PERFECT with this preparation).
