    Any smoked salmon recipes?

    Hey guys, was just wondering if anyone has any recipes that involve smoked salmon. I don't eat too much fish, the girlfriend doesn't like it, but smoked salmon is something you can find at the grocery store and it doesn't require cooking it up (I've never cooked fish, either). I miss the fish taste.

    Anyway, I decided to make this thread because I was thinking of one of my favorite appetizers at a local restaurant around here. It's smoked salmon, with thin sliced red onions, capers (mmmm!), and olive oil with a lemon on the side. It's absolutely delicious and I was thinking, hey, I can probably make that pretty easily at home.

    But I wanted to know of any other dishes that smoked salmon goes good with as I honestly just don't know. I just had it on toast with fresh garden tomatoes and it was pretty good, though. But I'm looking for more.

    Yeah, you're in good shape pairing smoked salmon with Mediterranean ingredients for the most part (artichoke hearts, capers, roasted red peppers, banana peppers, even olives)... My favorite things to make with smoked salmon are generally hors d'ouveres such as salmon on water crackers spread with a dijon mayo and topped with crumbled goat cheese, capers, and a bananna pepper.

    There's always the classic bagel and lox, which is one of those perfect foods.

    You can make some serious salmon salad with it too. Normally I would make that with many of the same ingredients becasue I love vinegar/olive oil things with salmon. Use dijon and mayo as the binder and just throw whatever you like in there.

    Also, don't be afraid of cooking fish... fish is very very easy to cook and unless you're squeamish about raw fish, you can even screw it up without endangering your stomach... I normally barely cook salmon so that the inside is still raw because that's my favorite thing ever (do the same with tuna)...

    But really, it's normally just 4 minutes on each side for an average portion of fish (if it's thicker, you may have to finish it in the oven to get the inside totally done). Start a pan with some olive oil (preferably a non-stick pan) over medium-high heat... just when it gets to smoking, add the fish skin side down (if applicable) to get that crispy and then flip it over and finish it off.

    An even easier way to cook fish (especially thin cuts or white fish) is with a package made of aluminum foil. Get something like sole, tilapia, or trout -- oil the foil a bit, put the fish inside the packet. Top/surround the fish with herbs of your choice (dill generally goes good with fish, nothing too strong or it'll overwhelm the fish), slices of lemon, and pour a tiny bit of white wine inside the packet before sealing. You can do this with salmon too, but I really like pan-cooked salmon a lot more... the oven works best with delicate white fish. Cook it at 350 for 15 minutes or so (you can peek inside the packet... the fish should be opaque and fairly flaky) and serve over rice, couscous, etc. and with a green vegetable. Very healthy meal and takes about 25 minutes.

    Oh, and fish CRAVES acidity, so always use some acidic component such as lemon juice, lime juice, or vinegar to brighten it up. Something like tilapia or mahi mahi is pretty flavorless, so it needs as much help as it can get.

    Oh, another easy fish dish is ceviche. Just buy some random whitefish, shrimp, scallops, (even squid/octopus), soak it in a mixture of lime juice, hot sauce, diced chilis, onions, etc. and the fish will "cook" itself in the acid. This is a GREAT summer dish and whitefish is generally pretty cheap.

      1 cup smoked salmon (packed tight)
      1/2 cup cream cheese
      1 tbsp capers
      1 tbsp finely minced red onions
      1 tsp smoky bbq sauce
      1 tsp mayo
      3-4 sprigs of cilantro
      salt and pepper tt
      4-6 bagels toasted

      Combine all ingredients together and form a bit of a paste. Toast the bagels or pop them in the oven for a few minutes until they're golden brown.

      Spread the salmon over top of the bagel and garnish with a sprig of cilantro. Enjoy.

        Mmmm, sounds delicious. Thanks for the general fish cooking tips too. I'll have to prepare all of these soon.
