    Girlfriend got me a kick*** Presto Digital Deep Fryer for Christmas

    It's go time. I live in Wisconsin now, she got tired of me always saying "this would be so much better fried like we do down south".

    I'm so excited words seriously cannot describe it.

    wings, tots, corndogs, mozzarella sticks, crinkle fries, chicken fingers, okra, onion rings, egg rolls, omg I'm like a little girl right now.

      Awesome, though, that you got something you really wanted. My wife and I just went and bought iTouches and a Wii together so we wouldn't buy a bunch of silly stuff we didn't care much about. I like it better that way.

        Nice...I'm probably going to pick one up after Christmas. A fryer will be much easier than using a large pot, and you'll get the oil temperature just right.

            Yep, and at least with a real fryer you can keep the oil temperature up, because oil that's too cool is the reason for greasiness and the health issues associated with frying. Use a somewhat healthy oil (peanut, safflower, canola, coconut), fry at least at 350 for the final fry (if you're doing fries, do them at 325 until they're tender, set them aside, then fry again at 375 for perfection/awesomeness) and you shouldn't get much grease. Also, doing things in fairly small batches is key (especially with home fryers, as they don't hold temperature as well as commercial deep fryers), otherwise the oil temp will drop and everything will be greasy.

            Make some beignets for me.

            Pate a Choux Recipe (can be used for bengiets, cream puffs, eclairs, gougeres, and chouquettes)

            1 stick of butter
            1 C water
            1 tsp sugar
            Pinch kosher salt

            Melt all that down together in a saucepan over medium heat until it comes to a simmer, then remove from heat and stir in 1 C of flour with a wooden spoon (stir your *** off!). Once it comes together, put it back on medium heat for about 30-45 seconds, stirring constantly until it pulls away from the pot. Transfer the dough to another bowl and mix in 3 eggs, one at a time -- use a wooden spoon and just keep stirring and stirring until it comes together into a smooth, shiny dough that's slightly yellow.

            If you're making beignets, you can stir in some diced fruit like pears, apples, berries, dried cranberries, etc. and any spices that you want. Then just drop spoonfuls of batter into the fryer at 360ish and cook until golden brown. Dust with powdered sugar or serve any number of other ways...

              Everyone I've known with a fryer always does snickers, twinkies, and other stuff like that when they have people over...heart attack waiting to happen, but the novelty is worth it.

                    Damn those things are soooo good. I'd never heard of those until I got up here. Funny thing, when I moved up here I saw bratwursts everywhere and I started eating them and LOVED them. I'd never even seen one back home but now when I visit home I see them in most grocery stores. They were there all along I guess.
