 How will you be preparing the shrimp?  I put them in running water from the sink and they soak for 10 minutes or so. Gets the fishy taste out and peals come off so easily.
 
 Then I steam them for a short bit, and usually saute with string beans, etc. Asian style with garlic, ginger and the like.
