    Ugh...this thread has got me fiening for a Burger right about now and there aren't any good spots around here other than Five Guys that make good Burgers

        Grilling burgers up a little later today. We've found that just throwing some Montreal steak seasoning on them gives it the perfect flavor. And a capable Grill Master. Yeah, that's me.

          I just grilled burgers last night. Damn were they good.

          In my opinion, you just want to keep the meat simple. All I used this time was Lawry's for seasoning as that's all I really had around. I really need to stop by the spice area next time I'm at the grocery store. Who runs out of black pepper? lol

          Anyways, for me, the key is to just leave the damn burgers alone when they're cooking. The only time I ever touch them is to flip them once and again when I take them off the heat. When I'm at someone's house and they start doing things like pressing the burgers when they're on the grill, or flipping them every two minutes I want to cry. They're ruining all the juiciness!

          Last night I put sharp cheddar and mustard on them. That's it. Also, I toasted the buns on the grill. So a simple burger, sliced zucchini cooked in some olive oil on the stove, and a handful of garlic/onion chips made for an awesome meal.

            I may look in here for whenever I get the opportunity to grill for the first time ever later this year. You know, if the sun ever comes out in Washington.

              I've got a great recipe that I make on the first nice day of the year.

              Take chuck or beef, whichever you prefer (I use beef) and get some packets of onion soup mix. I dont really measure anything when I cook, but I would say you need one pack of onion soup mix for every 4-5 burgers. Mix the onion soup mix in with meat, and add a bit of season salt, some barbeuce seasoning, garlic powder and onion powder. Then, just form them into patties and toss them on the grill.

              While they're cooking, make some cole slaw and put that on the bottom of the bun. Once the burgers are done, toss them on the bun with the coleslaw and some cheese if you like. It's a simple recipe but people LOVE when I make them.

                Absolutely! That's why I can cook burgers better then my girlfriend or friends, because I know how long it takes approximately each side. Same with steaks. About 4 minutes per side, and it'll be done.

                I admit, I get a bit paranoid about stuff being undercooked, but I don't get too worried with steak or burgers (moreso steak). Pink is good, and they'll continue cooking when they're off the heat. I can't cook BBQ chicken for **** though.

                  Use 70-30 meat. Or something like that. The fat gives the taste. Don't flip the burger too much or press on it...it'll get rid of the natural meat taste. I like to grill onions and if you are using a non stick grill/pan you can put on the sauce during the cooking, which I think helps. I also put the cheese on during the grilling along with salt/pepper. I also like to give the buns a crunch by putting them on the grill or toasting them and sesame burgers or kaiser rolls are the best.

                  Also, topping wise, don't get TOO crazy, but I like onions, swiss cheese(or do some other good cheese that isn't american.) and bacon(I've heard it's best to put them in the oven because it keeps the juices in...donno myself.).

                  And this is what I use for my sauce-

                  Barbecue, honey mustard, ketchup, mayo, sugar. You can also add(as I have myself...I like it but people might say it is overboard on tastes) which is a bit soy sauce, a bit of sweet sauce- donno what it is, some worcester, some teriyaki and some lemon. I think a good balance of it all makes it taste great...it tastes like BBQ sauce but it has a nice little additional taste to it of tangyness which makes it more interesting than the usual BBQ or ketchup.

                  Also a couple tips that are a bit obvious- let the meat reach room temperature before you put it on and put an indent in the middle so it is easy to put on toppings and keep them on.

                    The "don't press on a burger" rule is a loose one, and you can actually get amazing results with a thin patty and a lot of pressing during cooking. That's where the Smashburger concept came from, and those have an incredible sear and stay juicy. Again, resting after cooking is the key to juiciness. Never smash them on a grill though, because you're just squeezing all the juices and flavor out of it into the fire. In a pan, it gets squeezed out, caramelized, and sticks to the outside of the burger in an orgy of crispy beefy goodness.

                    Grilling burgers never makes as nice of a burger as a pan IMO... you lose so much of the flavor down into the grill grates, and personally, I don't think the smoke taste really makes up for it.

                    I'd suggest cooking a burger in a pan on the grill haha... done it before, and it's the best of both worlds because you do get some of the smoke taste onto it, but still get a real sear and have a juicy burger at the end. Easier to handle when flipping and whatnot also, no mistake burgers going through the grates, or delicious loose-formed patties falling apart because it sticks to the grill...

                      Here's mine:

                      1 LB 80/20 beef
                      1 egg
                      teaspoonish each of onion powder, mustard (Dijon if you've got it), Worcestershire
                      1/2 teaspoon each of pepper and salt
                      1 clove of garlic, finely minced

                      Mix it but don't abuse it, the more you fondle it the tougher the final product will be. Form it into 1/4 pound patties, like somebody else said, put a dimple in the middle with your thumb. This will keep it from turning into a ball as you cook it. Cook over a hot grill 7ish minutes on each side, FLIPPING ONCE. Don't poke them or push on them with the spatula, don't keep moving them around. Just let them do their thing.

                        I use monterey jalepeno burger seasoning. Add 80/20 ground chuck with that stuff and a little bit of water.

                          I mix the ground beef with 1-2 eggs (depends how much ground beef you're using, 1 - 1 1/2 lbs. use 1, 2 if its 3 lbs.), Worcestershire sauce, minced garlic, salt, pepper, and bread crumbs. I've occasionaly used that onion soup mix with varying results. Sometimes the onions cook well inside the burger, but sometimes they don't.

                          I've also made some tasty pineapple teriyaki burgers a few weeks ago. I use 1/4 cup of pineapple juice instead of egg, and substitute the worcestershire for teriyaki sauce. Still trying to figure out the best way to grill the pineapple though. When I did it a few weeks ago I grilled it on the burger for 2 minutes, but you do have to make sure that the side of the burger is done that you put on since it won't be directly on the heat. Wondering if I should just grill the pineapple rings on the side next time and then throw them on the burgers when they are done.

                            Here is something a little different...

                            Cajun Pork Sliders

                            Mix a pound of 90/10 ground pork with 1 lb crumbled Andouille Sausage.
                            Finely chop 1 small onion and 1 small green pepper. I put them in a food processor until it is almost liquid. Mix the veggie mixture into the meat. Season with salt, pepper, and a tablespoon or so of Louisiana hot sauce.

                            Shape into 2 ounce patties and grill on medium heat around 2-3 minutes a side or until done depending on your grill.

                            Place on a fresh slider roll and top with a hot pepper mayo. To make this, mix 1 part mayo with 1 part a hot pepper relish like Wickes

                              What about turkey burgers? I know they don't have nearly the flavor of beef, but they're a lot better for you.

                              Someone told me of mixing 3/4 lb ground turkey with 1/4 lb ground beef. You get most of the health benefits of turkey with some of the flavor of beef. Sounds interesting.


                              My mom makes turkey burgers with chipotles and apples. It sounds weird, and I haven't eaten one, but they say they have a lot of flavor.

                                I always get Trader Joe's 96% lean patties, which are surprisingly delicious for being so lean.

                                Put cumin on one side, salt and powdered Aleppo red pepper on the other side, throw them on the Foreman Grill for around 3 minutes on each side, toast the buns in the meantime. Slice of cheddar, ketchup, and that's it.
