Speaking of Cleveland, Kevin Mack on the original Tecmo Bowl was a beast to tackle. He wasn't Bo, but he was still pretty good.

Jerry Rice was pretty unstoppable at WR in both TB and STB. I used put him at RB in STB and throw to him out of the backfield.
