One thing I had to realize when 1st playing this game in 04:
I was used to Madden, were if you juked, while you were in that animation, no other defender could tackle you out of it. So it really didn't matter how later you did the move.
I think, and from what I've seen, you have to use these moves when they should be used not just in any situation.
