Speed shouldn't change the sliders I performed a previous test that showed slow speed doesn't change player interactions. I personally find it too easy to pass on slow, but to each their own.
With regards to interceptions this number was through game testing. I altered it repeatedly to get an average of 1-2 interceptions per game. Interceptions are still too often in some situations (warping to the ball) and dropped to oftenin situations that warrant an interception. If you want less knockdowns I did fix this previously. It is controlled by the pass coverage slider. However, fixing this caused to many yards per catch as the defenders were way out of position. Generally on these sliders there aren't all that many knockdowns of the CPU only bad player passes.
Incidentally for anyone still using this check the front page. I have slider changes for year 4 and beyond that I am going to post tonight (the game changes remarkably once default rosters are gone).
