on your last point: you might want to lower the user QUICKNESS slider. sounds like you're really good on the sticks and can break a guy down. raising cpu quickness will stop you from being able to do this. I'm still learning the controls (having never played 2K12 and live on 2K11), so I'm not nearly that good.
