As for the OP:
I can't stand the sideways broadcast cam with TCM so that's the other main reason why I play APCM.
Regardless of the mode (TCM, APCM, normal mode) I highly suggest watching autosims of your FGs/punts. In TCM, for FGs your kicker will never, ever miss unless it's too far for him. If you only attempt FGs within his range, he'll make 100% of them, which isn't realistic.
There are some plays that get bugged. IE. there are some runs/options from the Pistol where the HB is supposed to put his belly on the QB's hands to take the handoff, but instead he'll put his belly on the QB's elbows so that he can't get the handoff. When this happens, the QB will just stand there for a second. In TCM, I think he just stands there and waits to be tackled. In APCM you can take control of the QB and try to get something out of the buggy play.
In TCM the QB usually throws WR mid screens and bubble screens too late, making them ineffective. In APCM I manually throw these screens when they should be, and then let the CPU take over after the catch so it's still coach mode, only with me throwing the ball when it's supposed to be thrown.
In TCM on defense you can't hot route any players other than the 1 you control (I think it's MLB2 in 3-4 and RE in 4-3). In APCM you can hot route anyone you want. I don't hot route often, but sometimes I'll change a hook zone or blitzer to QB spy. I'll also sometimes spread my cover 2 deep zones and then hot route a deep zone between them, turning a cover 2 into a cover 3. If I suspect a screen I'll sometimes hot route a blitzer to a flat zone on the HB's side.

This is one of the main reasons why I use AutoPass Coach Mode (APCM) instead of True Coach Mode (TCM). With APCM your scrambler won't take off unless you player lock on someone else, which I almost never ever do. That way I can recruit the 85+ SPD QBs to run my option plays and have him still throw the ball when I call pass plays rather than tucking and running all the time. If you still want him to take off and scramble if he so chooses, you can always playerlock on a lineman and then he'll have the chance to scramble just like he does in TCM.

On options with a mesh (read option, triple option, inverted veer, etc) the QB won't hand off on his own, as you noted. For these options I player lock on an O-lineman and then snap the ball. Because I'm not controlling the QB any more, then he'll run the option like he's supposed to (I'm a run-first spread option guy so I call a lot of options).
From time to time (probably not even once per game) I'll player lock on the OL for a pass play so that my scrambler can scramble if he chooses, but the entire reason I called a pass play in the first place was because I wanted him to throw the ball, so I very rarely do that. But if you want yourQB to scramble during APCM, this is how you do that.Favorite Teams:

COACH MODE SPECIFICS:
I'm a spread option guy and I recruit scramblers @ QB. Using APCM, if I don't player lock on anyone, then I'm "controlling" the QB so he won't scramble on his own. He will pass on his own because "autopass" is turned on. This means that he'll throw the ball on passing plays, which is what I want.
On option w/ a mesh (read option, triple option, inverted veer, etc) you have to player lock on someone (I always do an OL guy). This is because if you don't then you're still "controlling" the QB and in order to handoff to the HB on the option you have to push "A". Since I don't control anyone, I'll never push "A" so the QB will never handoff and will keep it every time, even when the correct read is to give. By player locking, the QB will correctly run the option like it's supposed to be run. Even though I'm player locked on an OL guy, as long as I don't use the controller (just like when I'm not locking and "controlling" the QB) then the player will run the play like he's supposed to.
As I wrote in the post you probably read, I do throw the ball on WR mid screens, bubble screens, and HB slip screens because the AI almost always throws it too late on those plays. All I do is press the receiver's button at the correct time (I don't move the QB at all) and then I let the AI control the receiver after the catch.
Since I don't lock anyone on passes so that my QB doesn't scramble ALL THE TIME he will never scramble on his own. Because of that I'll manually scramble him occasionally (probably once per game) but when I do that I don't use any jukes, spins, or hurdles since the AI's stick skills are worse than probably all players.

When adding recruits during the season, can only add someone that has me in his top 10 already and they cannot be 4* or 5* . Also can't be 3* for K,P,FB.
Start of every season, write down QB's AWR. At the end of the season, remove ALL in season progression.
Start of every season, edit all players with AWR > 70 down to 70 AWR.
Adjust all incoming Kickers to have -20 KAC
Adjust players' INJ rating as follows to get more injuries:- Quarterbacks (-10)
- HBs (-15)
- WRs (-10)
- TEs/FBs (-20)
- Defense: all players (-40)

I've mentioned before that 1 thing I love about coach mode kickers (when you're simming the kicks) is that you have to recruit kickers with at least some accuracy. This makes recruiting more interesting as you have to search for more ratings than just 1.
Now I'll use my current top 2 HBs to illustrate this point further. When playing coach mode, 1 pretty important rating for runners that I'm sure is completely ignored when you're controlling your guys (for good reason) is BCV (ball carrier vision).
My #1 HB is a SR while my #2 guy is a FR who is above a SO, JR, and SR(RS) on the depth chart. Compared to the starter, my FR is just as fast with the same ACC, and AGI. While the SR has much better SPM and JKM (which the CPU never uses) by FR has a much better SFA (which the CPU uses all the time) and has much better TRK. The TRK is great as my FR constantly falls forward for extra yards. Based on all of this, my FR should be the starter (and he absolutely would be if I were controlling my guys).
However, my SR has 87 BCV while the FR only has 69 BCV. Most of the time my SR finds the correct hole to run through and he often makes a nice little cut to get into the best hole. My FR on the other hand, often misses an obvious hole. There are a lot of times where there's a nice hole that'll let him get north/south, but instead he breaks it off parallel to the LOS and takes a loss. He even does this sometimes on HB dives where there's an obvious hole but he just doesn't see it and tries to make something (worse) happen.
Because of his naturally gifted physical skills (mainly his ability to fall forward most of the time) my FR is 2nd on the team in YPC @4.5, but my SR is #1 @ 5.3 YPC. The sole reason my SR is performing better is because he has the experience to find the correct hole to get the most yardage, while my FR is too green to find the best holes yet. This is just one of the little details that makes me love coach mode so much. Every time my FR misses an obvious hole I may scream at my TV telling him where he should've gone, but I'm still smiling on the inside because I find it so cool.
FOOTNOTE:
Because of all this, BCV is also an important rating that I look @ for my spread option QBs as those with low BCV can take some funky angles on option keepers. I have a house rule where I don't scout anyone until they sign so I only have a guesswork letter grade to use for BCV. It adds some more relief when that BCV grade goes up upon scouting as well as dread when it goes down (my current FR HB's BCV went down when I scouted him).Favorite Teams:
