One thing I do with the service schools is edit all their QBs to be low 70s throw power, high 50s throwing accuracy. For whatever reason, this tends to keep them in check.

For GT I'll usually do high 70s throw, high 60s acc.

The one thing I also look out for, is watch every year for the coaching carousel and make sure none of the service school coaches go somewhere else and run a service school playbook, lol. If they ever move somewhere else, I usually edit them to a default Spread Option playbook and move them to 30/70 run/pass or so so it doesn't get weird.
