Yeah, just like The Show and FIFA, altering the existing structures in franchise/career modes to recreate 2020-only changes is a ton of work and risks the stability of the mode when things need to revert to normal conditions in future seasons.
Now what they COULD do, but likely won't because it doesn't fit within their development plans, is create a standalone 2020-21 season mode with the realigned divisions, schedule, divisional playoff, etc. Once again, a big commitment of resources, and doing it quickly risks stability issues which then requires support. However, as an add-on you could monetize it as DLC. I'd probably pay $5 for it but not sure of the cost/benefit as season mode likely isn't a big seller which means focusing on next-gen development wins out.

I would wager that by the time the season starts, they will have already started shifting resources and dev time to NHL 22.
