He isn't saying the pass rush is realistic. He is saying that tuning sliders to get the pass rush to get to the QB in a realistic time does not work in Madden because routes are run ridiculously slow on the old gen versions of the game.
Essentially the game isn't balanced if you drop pass blocking down to a level that leads to the DL getting to the QB within 2.5 seconds since the routes in the game are taking two times as long to develop compared to real life. While it may not be realistic to have 5 seconds in the pocket, given the slow route running it actually leads to a balance that is more authentic in the end.
This seems to be more of a last gen issue as I believe the current gen route running with next gen stats powering it has led to released and routes being ran much quicker.
