I'm pretty sure at the team select screen you press the L trigger (360) and it turns on AFL presentation mode. The logos in the team select screen should change to the AFL ones as well.

The presentation no, but you can use the uni's even if the other person doesn't have it.

is there any way to maintain the AFL presentation (ie unis, logos, and announcers saying original team names) but not have the sepia tone?

I absolutely love the features except for the weird brown haze over everything
