Unfrozen Meat
Someone left the deep freeze door open (cracked). The $500 worth of meat in the freezer thawed. Is it safe it close the door and let it refreeze.
Im thinking the door was cracked for 3 or 4 days. Any help is appreciated.

It's safe to refreeze. But it will likely lose quality. Water is lost during defrosting so the meat will be drier later on when you cook.

I'd say mid 50s for temp and maybe 2 or 3 days.

I had food poisoning once and since then I've played it super safe. Toss it. Food poisoning was the worst I've ever felt next to the flu.
It isn't worth the risk, IMHO.

Could be worse. At a fraternity BBQ in college the stupid-ass in charge of the food marinated a bunch of chicken parts in BBQ sauce for a day (refrigerated), cooked the chicken, then served the marinade in bowls to eat with the chicken - yeah, same BBQ sauce that covered raw chicken for 24 hours. Literally every single person that ate chicken that night ended up in the hospital with violent food poisoning, some for a few days.

I'd probably temp it but it's likely garbage and top risky to eat. Def wouldn't refreeze. If it's tainted there's no going back.

I had to get Servesafe certified when I worked in corporate restaurant managment. Pretty much thawing and refreezing anything is a bad idea, and when it comes to raw meat you really don't want to mess around.
Would you likely be safe, yes, but not really worth the risk unless you are seriously financialy strapped. IF you de keep it smell it before you cook it and make sure it is all coked well done. |

If I remember correctly, although freezing or cooking (at a high enough heat) this meat at this point can and will kill the bacteria involved, it will not also remove the toxins created by the bacteria. Which will then kill you.

Not all of the meat became unfrozen. Which is good.
So we can salvage quite a bit. What a bummer this is.
