Probably not everyone's issue, but your tv panel might have something to do with the color.
I have a sony 55 inch 950a, pretty much one of the best tvs outside of the 4k. I still think the ps3 version of mlb 13 had richer colors. As far as the lighting and just about everything else the ps4 blows away 13.

Anyone else have problems picking up the ball in day games?

Depends on the stadium backdrop and location of sun. Stadiums like Cleveland was tough because of the light green backdrop from the trees, especially when the sun was on them. But if you are in a stadium with a good backdrop like Arizona it isn't hard. I do prefer to play night games in exhibition mode just because of the sun

I think the uniforms especially need more of a brighter look to them. The red isn't red enough to me. It almost looks like a pink. If you want proof of that then you can check out the player portraits for the fake minor league players. The hat colors are more like a pink. Especially with the Angels.

Safeco get me during the day, because of the camera I use and the light blue and white banner above the batters eye. With my zoomed camera that banner is right at the pitchers release point. It was so bad in 14, that I was no-hit by Chris Young.

I did not have any problems in Cleveland since MLB 14 I think. They made the trees in the hitter's eye much darker (or maybe it was just in 15 that they were made darker). But I agree, previously the sun reflections on those trees in day games was a major issue in Cleveland for most batting cameras.
